Clean the mango and cut into small pieces, put it in a pot with 500g of water, 1 teaspoon of lemon juice, a bit of salt and agave syrup. When the water begins to boil, turn off the stove and blend the ingredients. Meanwhile put two teaspoons of psyllium seeds in half a glass of water and wait for about 15 minutes, until it forms a kind of jelly. Now blend the seeds and add them to the mango mousse. Leave the mousse to rest for a few minutes, when cooled use a sieve to remove the seeds of psyllium. Put the pudding in a jar and leave it in the refrigerator for a few hours. This pudding is great with fresh fruit or berries cream.

Pulisci il mango e taglialo a pezzetti; mettilo in una pentola con 500 g di acqua, 1 cucchiaino di succo di limone, un pizzico di sale e lo sciroppo di agave. Quando l'acqua inizia a bollire spegni il fornello e frulla gli ingredienti. Nel frattempo metti due cucchiaini di semi di psyllium in mezzo bicchiere di acqua e aspetta per circa 15 minuti, fino a che non si sarà formata una sorta di gelatina. Aggiungi la gelatina di semi alla mousse di mango e mescola bene. Lascia riposare la mousse per qualche minuto, quando si sarà raffreddata rimuovi i semi di psyllium utilizzando un colino. Metti il budino in un barattolo di vetro e lascialo in frigorifero per qualche ora. Questo budino è ottimo servito con i frutti di bosco freschi o con la crema di frutti di bosco. Questo fantastico budino non contiene zuccheri e può essere gustato in qualsiasi momento della giornata, anche a colazione!
