PURPLE POTATOS AND EGG YOLK



INGREDIENTS



for 2 people





- 500 g purple potatos (Vitelotte)/500 g di patate viola (Vitelotte)

- 2 egg yolks/1 cipolla rossa

- 1 red onion/2 tuorli d’uovo

- fresh or dried rosemary/rosmarino fresco o secco

- salt to taste/sale qb

- extra virgin olive oil to taste/olio evo qb

Behind the scenes First boil the purple potatoes for 5 minutes in a lightly salted boiling water. Drain the potatoes and put them in a baking sheet, peel and crush the potatoes with a fork. Cut the red onion into thin slices and put them on potatoes, do the same with the rosemary. Season with olive oil and salt. At this point, bake for 20 minutes at 200 °. Put the potatoes in the pot and add the egg yolk while still hot. Season yolk with salt and pepper .

Per prima cosa fai bollire le patate viola per 5 minuti in una acqua bollente leggermente salata. Scola dunque le patate riponile su una placca da forno, privale della buccia e schiacciale con una forchetta.

Taglia le cipolle rosse a fettine sottili e cospargile sulle patate, fai lo stesso con il rosmarino. Condisci con olio evo e sale.

A questo punto inforna per 20 minuti a 200°.

Impiatta le patate e aggiungi il tuorlo d’uovo quando sono ancora bollenti. Sala e pepa il tuorlo a piacere.
